Cashew “Cheese” Ball
INGREDIENTS
1 cup raw cashews | 2 teaspoon apple cider vinegar |
1/4 teaspoon salt | 1 juice of small lemon |
1/4 cup cold water | 1/2 cupt almond slices (optional) |
DIRECTIONS
1. Cover cashews with water and soak for a few hours, or overnight
2. Pour off all water, and place nuts in food processor
3. Add salt, vinegar, lemon juice. and water. Puree for 3-4 minutes or until completely smooth and creamy in consistency.
4. Refrigerate for an hour.
5. Remove from container and place on parchment paper. Roll around on parchment paper until a ball forms. Cover in almond slices if desired. Plate and serve.
