German Sweet Potato Salad
German “Potato” Salad
Ingredients
- 2 Sweet Potatoes (diced)
- 4 Slices of Turkey Bacon
- 1 tablespoon Butter
- 1 tablespoon Gluten Free Flour
- 2 tablespoons Turbinado Sugar
- 1/3 cup Water
- 1/4 cup Apple Cider Vinegar
- 1/2 cup Green Onions (chopped)
- Sea Salt & Pepper (to taste)
Directions
Step 1 | |
Bring a large pot of water to boil. Add potatoes. Cook until tender but still firm. Drain and set aside | |
Step 2 | |
In a deep skillet, on medium, melt butter then add bacon. Cook until evenly browned and crisped. Set aside turkey bacon and chop. Do not drain pan. | |
Step 3 | |
Add flour to butter and mix until flour is completely saturated. Mix in sugar, water, and vinegar and cook over medium heat until thickened. | |
Step 4 | |
Add potatoes, bacon, and green onions to skillet and stir until coated. Season with salt and pepper and serve warm. |
