Mashed Sweet Potatoes
INGREDIENTS
10 cups sweet potatoes chopped
1/4 cup milk (almond, rice, or coconut)
Salt to taste
1/4 teaspoon cinnamon (optional)
DIRECTIONS
- In a large pot add sweet potatoes and enough water to cover. Bring to a boil over medium high heat.
- Reduce heat and let simmer for 10 minutes or until potatoes ar tender.
- Drain well, then return to pot. Using a hand mixer or masher, mash potatoes to desired consistency. Add milk, salt, and cinnamon as you work.
- Move to serving dish and serve hot.
Tip: You may substitute yams for the sweet potatoes if you prefer.
